- Para nuestras soletas cernimos toda nuestra harina. Reservamos.
- Batimos las claras con la mitad del azúcar refinada, hasta llegar a punto de turrón.
- Después batimos las yemas con la otra mitad del azúcar refinada, hasta blanquear.
- Colocamos las claras batidas a las yemas priviamente batidas y mezclamos con ayuda de una pala.
- Enseguida agregar cuidadosamente en forma de lluvia la harina, mezclamos hasta incorporar bien todos los ingredientes. Nos debe de quedar una mezcla un tanto espesa.
- Colocamos la mezcla en una manga pastelera con duya lisa y comenzamos a formar tiras de 10 cm sobre la charola con papel estrella.
- Espolvoreamos azúcar glass ensima de todas las soletas y llevamos a horner a 180 grados centígrados por 25 minutos.
- Así deben de quedar las soletas después de coserse. Deben de estar doradas.
- Para nuestra crema mascarpone batimos nuestras claras en un bol hasta llegar a punto de nieve. Reservamos.
- Batimos nuestra crema Lyncott a medio punto y reservamos.
- Luego en otro bol batimos las yemas y el azucar, hasta lograr una mezcla un poco amarillenta.
- Enseguida a nuestra mezcla de yemas, agregamos el queso crema y batimos nuevamente.
- Posteriormente agregamos las claras batidas y mezclamos. Por último agregamos la crema e incorporamos todos con ayuda de una pala. Reservamos.
- Para el jarabe de café, hervir el agua con el polvo de café, dejamos enfriar y agregamos un poco de azúcar. Mezclamos bien hasta incorporar todo.
- Para el armado del tiramisú tomamos como base las soletas. Recojamos las soletas de una en una en el jarabe de café y colocamos en el molde.
- Lista nuestra primera capa de soletas colocamos la crema y alisamos con una espátula. Continuar con el mismo procedimiento hasta terminar. Llevamos a refrigerar por 4 horas. Por último sacamos del refrigerador y espolvorear con cocoa en polvo.
- Resultado final obtenido. Lo logramos juntos, felicidades.👏♥️
