- 11 gr levadura seca
- 2 cucharadas sal
- 2 cucharadas azúcar
- C/N pizca pimienta
- C/N pizca orégano
- 15 ml aceite
- 1 huevo
- 1 taza agua
- C/N jamón
- C/N piña
- C/N queso mozzarella

- PARA LA SALSA DE JITOMATE:
Al jitomate le cortaremos en la parte de arriba en forma de cruz, y le cortaremos en un pequeño círculo en la parte de abajo, y lo agregamos en agua hirviendo durante 3 min.
- Ya que estén cocidos, sacamos del agua y le quitamos la cáscara, semilla, lo cortamos en cubos y reservamos.
Preparamos nuestro mirepoix blanco, cortamos la albahaca en chiffonade y picamos el ajo. - Acitronar el mirepoix en aceite de oliva, agregar el ajo, añadir la pasta de jitomate y acitronar a fuego lento. Agregar el jitomate en cubos, el puré y cocinar por unos minutos.
Agregar el fondo, hervir, agregar el sachet de'epices y cocinar por una hora. Licuar, sazonar y añadir albahaca.
- PARA LA PIZZA:
Unir todos los ingredientes secos menos la levadura y hacer un volcán, la levadura hidratar con la mitad de agua. En el volcán poner en el centro el huevo, el aceite y comenzar a integrar.
Después agregar poco a poco el agua con levadura y amasar.
Si es necesario agregar más agua, dejar reposar para que infle cubriendo la masa con aceite y tapar con una bolsa. - Ya que haya inflado la masa, estiramos con ayuda de un rodillo, del tamaño que se desee, en la charola pondremos un poquito de aceite y harina para que nuestra pizza no se pegue y no se queme.
Y ya una vez estirada la masa lo colocamos en la charola lista. - Pondremos el horno a 200°C mientras a la pizza le pondremos la pasta de jitomate y queso. Hornearemos durante 10 min y sacamos. Agregamos el jamón y la piña, volvemos a meterlo al horno y dejamos hornear durante 25 a 30 min. Depende del horno.
